Red Jalapeno Dressing - Beef and Red Jalapeno Casserole
Serves: Serves 6 to 8 people


2 pounds Ground Beef
1 jar Queso
10 Flour Tortillas, cut of torn into small pieces, as desired
1 cup Heavy Whipping Cream
1/4 cup Chef Fearings Red Jalapeno Dressing
2 Cups (8 ounce) Shredded Cheddar or Colby-Jack Cheese

Heat oven to 350 degress. Coat a 2- quart casserole or baking dish with cooking spray. Cook beef in a large skillet over Medium-High heat, 6 to 8 minutes or until no longer pink. Drain pan juices, if desired Stir in Queso; simmer 2 minutes and remove from heat. Stir in tortillas and set aside. Stif cream and dressing together in a seprate skillet over Medium heat. Simmer 5 minutes; stif frequently and watch carefully to prevent scorching. Transfer beef mixture to prepared baking dish; pour cream sauce over top and sprinkle with cheese. Bake 20 mintues or until hot and bubbly. Let stand 5 minutes and serve.
