Tomato Coriander - Tabbouleh Salad with Shrimp


1 Cup Bulgur (cracked wheat) uncooked
2 Cups Boiling water
1 Cup Chef McMillans Tomato Coriander Dressing
1 Cucumber, peeled and 1/4-inch diced
1 Cup Green Onions, sliced thin
1 Cup Parsley, minced fine
2 T Mint Leaves, minced fine
1 T Ginger Root, grated fine
Salt and Pepper to taste
10 Jumbo cooked shrimp - peeled & deveined

Place bulgur in a large bowl, and pour the boling water and Chef McMillans Tomato Coriander dressing over it. Stir, cover, and let stand for 15 to 20 minutes. When all of the liquid has been absorbed and the bulgur is tender, stir in the cucumber, green onions, parsley, and mint. Season with ginger, salt and pepper. Garnish with Shrimp.
